4 eggs
150 ml cream or plant-based alternative
100g grated cheese (e.g., Gouda, Emmental)
100g diced ham, salmon, or tofu for a vegetarian option
150g fresh spring vegetables (e.g., asparagus, spinach, zucchini, bell pepper)
Salt, pepper, nutmeg to taste
Fresh herbs like chives or parsley
Preheat oven: to 180°C top/bottom heat.
Prepare dough: Knead almond flour, melted butter, and egg into a smooth dough. Press into a greased quiche or springform pan, forming a small rim. Pre-bake for 5 minutes.
Prepare vegetables: Briefly blanch asparagus, lightly sauté spinach or zucchini.
Mix filling: Whisk eggs with cream, salt, pepper, nutmeg, and herbs. Stir in cheese and ham or tofu.
Fill quiche: Spread vegetables over the pre-baked crust, then pour the egg and cheese mixture over it.
Bake: 25–30 minutes, until the quiche is golden brown and set.
Serve: Let cool briefly, cut into slices, and garnish with fresh herbs.
