Recipe for Cauliflower Curry with Pecans

Ingredients:

Cauliflower

  • 500g cauliflower, in florets
  • 2 tbsp coconut oil, melted
  • 2 tsp coconut blossom sugar

Marinade

  • 2 tbsp soy sauce
  • 2 tbsp peanut oil
  • 6 tbsp sweet chili sauce
  • 1 tsp cornstarch
  • 1 tsp turmeric
  • 1 tbsp tomato paste
  • 20g nutritional yeast
  • 80 ml cold vegetable broth
  • 2 cloves of garlic
  • Curry, chili flakes, salt & pepper (amount to taste)

Topping

  • 50g pecans
  • Sriracha sauce
  • Tomatoes

Preparation:

  1. Cut cauliflower into florets, mix with coconut oil and coconut blossom sugar, spread on a baking sheet, and bake in the oven at 200 degrees for 20-25 minutes.
  2. Meanwhile, slice the garlic cloves and sauté them in a pan. Mix the cornstarch with vegetable broth and add to the garlic cloves with the remaining ingredients. Bring to a brief boil, covered.
  3. Finally, fold the cauliflower into the marinade and serve with pecans, tomatoes & Sriracha sauce.
  4. Coconut rice makes a great side dish. Simply prepare 200g rice, 20g coconut oil & a pinch of salt according to package directions.
